I see that it recommends wrenches for assembly, but I see no bolts in the packaging listing, nor do I see instructions for installing bolts. Do I need to buy bolts?

The unit comes with foot pads that are pre-drilled for anchors to be used. The unit itself only comes with temporary spike anchors so any permanent anchor would need to be purchased separately.

Thank you for your inquiry. The overall width is 12 feet, so you will need to measure the width of the two vehicles you plan to park under this canopy. You can use this everyday for a carport but there is not a snow load rating for this unit.

How would this be on top of black top pavement? Also, how hard is it to set this up and take down?

The unit is designed to be anchored into the ground and the stakes provided with it are for that use. If you are going to put it on black top, you will need to get advice from a local hardware store on the proper anchors to use.
There is a product manual located just underneath the picture on the item page. This manual shows all of the assembly steps so that you can decide whether this is something you feel can be easily assembled by you.

This shelter does not carry a snow load rating. The manufacturer recommends that any snow be removed from the shelter with a soft bristled broom or mop.

This unit features a side height of 6' 3". Measuring from the ground to the bottom of the valance, height would likely be just shy of 6'.
