By definition, almost all of our pop up canopies are water resistant only. We have some that are partially opaque but almost all of them will let some light through. Please let us know what size you are interested in and whether you need it to be truly opaque or if some light is acceptable and we will be happy to look into this further for you.

Is there a white cover available for the 10 x 10 "Summit" series instant canopy?

We recommend something like the Super Max 10x20 Shelter with Enclosure Kit . We do not have any shelters with 20 foot sides that roll up, however, each wall is completely removable. One 10 foot side does indeed roll up.
